Our journey began in late 2024 with Viri, owner and founder, who started with a dream. For many years, Viri honed her skills and learned the intricacies of the restaurant industry while working for others. Yet, a deeper calling persisted: the desire to create something truly her own, built on the authentic flavors she grew up with.

The soul of Taco Azul lies in the fields of Viri's childhood. Growing up in Mexico, her family owned a farm dedicated to cultivating many varieties of corn. Among these, blue corn held a special place.

Viri took profound inspiration from this simple, yet powerful, ingredient. The recipes born from this traditional grain—from deep, earthy tortillas to satisfying street foods—are timeless staples that have been perfected over generations.
